Olde el Paso time

So we decided to have yet more Mexican food but this time we cooked...well...sort of. We had hot n spicy chicken fajitas, with cheesey nachos. Oh my delicious! But then I think most food is.

Pretty simple really, cook the chicken until browned evenly (don't have to use chicken) then add the spice mix, let that cook for a few minutes, then add 2x chopped peppers (lengthways) no worries on what colour you have, and then it says to add a white onion but I only had a red onion left, which I felt was better. For the nachos, you get a bag of tortilla chips, cheese (I used grated) and the kit comes with 2 sauce sachets, layer up starting with the nachos, sauce, cheese, nachos, sauce, cheese, in an 180 degrees oven (preheated) for about 15 minutes I think we did it for.

Then enjoyed with tortilla wraps, grated cheese, guacamole, salsa and sour cream. YUM!
