Sweet chilli salmon sti-fry with boodles

My friend Lindsey is coming over tonight and I need something good to eat. I found some salmon fillets, vegetable stir-fry pack and a new thing called Boodles! Butternut Squash Noodles, how awesome! Recipe below (not that there is much to it)

Serves 2

2x reasonably sized salmon fillets

1x vegetable stir-fry pack

1x pack of boodles

1x sweet chilli sauce

I tend to get my ingredients from Sainsburys. Anyway, I put the salmon fillets in a non stick baking tray (lined with parchment or foil is fine) spray low calorie spray on the foil / parchment, place the salmon fillets on, spray with low calorie spray, season and then drizzle with sweet chilli sauce (I'm all for making it from scratch but this was a quick job) bake in the oven for 20 minutes at 180 degrees.

10 minutes later, heat a wok up or frying pan to hot (high), then bring down the temperature once it is heated to medium / hot. Spray some low calorie spray, add the vegetables, then them sizzle away and gently turn them every so often. Add the sweet chilli sauce 5 minutes later and get those vegetables coated in the delicious sauce. Boodles took me 2 minutes in the microwave then I added them to the vegetable pack.

By now the salmon fillets should almost be done, set up you dining area or put it on tv trays (we do that sometimes) and place the vegetables on the plate / past bowl first and then top with the salmon fillet (I tend to heat up my dishes before hand)
